A magnificent Michelin & Miles Davis experience

You could say it was a Milestone for us; the first time Les Etoilés Michelin du Topaz has collaborated with the Audi International Jazz Festival and it all came out in such a Perfect Way, whirling our guests up Seven Steps to Heaven made from the sublime sounds of jazz legend Miles Davis and a superb six-course dinner created by Michelin 2* Chef Thierry Drapeau.

Christian Brenner and his quintet played from a very specific period in Miles Davis’ tremendously prolific career, namely the two 1956 studio sessions that resulted in no fewer than four world-famous records, Cookin’, Relaxin’, Steamin’ and Workin’ — all of which was going on in the Topaz kitchens while the music played, except for the “Relaxin’”. That came later, long after the tables were cleared. The musicians added a selection of tunes from other iconic albums, including Kind of Blue, Miles Stone and ’58 Miles Stella by Starlight.

On the tables, Chef Thierry Drapeau treated us to a culinary serenade, with six courses that played on the delights of sea, air and soil and drew on inspirations from across his native France. We revelled in caviar pearls and smoked haddock over a chive cream, crumbed cod Grenobloise with truffled potato gnocchi, and roast hay-smoked veal with confits of kumquat and black garlic.

But Tempus Fugit when you Fall in Love, and ‘Round Midnight it was already About That Time. The night of Our Delight was over. For now.
