A Festival Of Jazz And Michelin Stars For The Ultimate Michelin Étoilés Du Topaz Of 2017

On December 14, Topaz is partnering up with the Audi International Jazz Festival to present a gorgeous six-course dinner created by Michelin 2* chef, Thierry Drapeau, together with the sublime sounds of Miles Davis played by an all-star jazz ensemble from Europe’s lively jazz circuit.

We’ve had a wonderful year of Les Etoilés Michelin du Topaz events, bringing some of France’s finest chefs to Phnom Penh to generously share their skills, passion and knowledge with our team and the glorious fruits of their labours with the city’s gourmands, and we’re proud to round it off with what promises to be the greatest event yet.

Hailed as one of France’s great chefs, Thierry Drapeau’s restaurant in The Vendée, La Chabotterie, won its second Michelin star in 2011, not long after his first was awarded just five years earlier. Two years later, he was selected to become one of Relais & Châteaux’ Grand Chefs, one of just over 500 around the world. This was the culmination of a career that began when Thierry started his first apprenticeship at the age of 16 and from there worked his way across the north, south, east and west of France in a series of celebrated restaurants, most of which boast at least one Michelin star.

His rich and inventive style reflects his journeys across his country and is the result of years of passionate research and creation dedicated to presenting and respecting the ingredients in their finest and purest form with a regularly changing menu designed by the seasons and perfected by Thierry.

For this event, he will take diners on a journey through flavour and form, bringing together the essences of earth, sea and air in a series of dishes such as “crumbed cod Grenobloise with spinach, truffled-potato gnocchi in a squid ink wrap, and a walnut-truffle cream”, and “roast hay-smoked veal with a creamy carrot flan and smooth rice purée, sweetened with confits of kumquat and black garlic”.

His backing musicians include British all-star jazz trumpeter, singer and composer Damon Brown, who has played with the likes of Sting, Eric Clapton, Bjork, Paul Weller, Maxi Priest, The Specials and DJ Gilles Peterson. Brown will share the stage with Belgian saxophonist Stéphane Mercier — who has six albums under his belt — French pianist and composer Christian Brenner, who is famed for his deft touch and subtle feeling for melody, time and atmosphere, Bruno Schorp on bass, and percussionist Pier Paolo Pozzi.

For one of the hottest nights of the year, we are opening up the Topaz Ballroom in order to accommodate 150 lovers of fine food and great music.
